Why did you choose to be a judge for the inaugural F&B@Sea Awards?
Simply put, the passion and the love I have for F&B made me want to be a Judge. I whole heartedly understand and appreciate the pressures, execution and delivery of F&B products to guests. Having the opportunity to acknowledge others passions is a chance I wouldn't want to miss.
In your view, why are the F&B@Sea Awards crucial for the industry?
Bragging rights. Yup. Even though we all walk by in our business attire and remain friendly and cordial with our peers, being able to flex some F&B recognition can serve as both an achievement and also, a motivator to knock off the incumbent. The competitive spirit is alive and well in F&B.
What advice would you give to companies considering entering the awards?
Don't overlook any detail.
What, in your opinion, constitutes a standout entry?
The story behind the entry that generates raving fans who were surprisingly impressed.
What are the top three criteria you prioritize when evaluating an entry?
Quality ingredients, presented exceptionally delivered with legendary service. That is the same for a Ham sandwich or Michelin starred menu.
Lastly, what are the three F&B trends in 2024 that excite you the most?
Clean eating, local products with great stories and susatainable products...I'll even add a fourth - F&B Love!
