Seven Seas Explorer will have a pan-Asian specialty restaurant, Pacific Rim, with dishes ranging from grilled Korean barbecue lamb chops to tempura-battered Canadian lobster with shiso leaf, finished with an orange ponzu sauce. The venue sports an Asian-fusion design, by RTKL.

Diners enter a lobby with a modern interpretation of a Tibetan prayer wheel, a large cylindrical floor to ceiling sculpture with decorative panels embossed with wishes for good fortune. The dramatic entry is flanked by doors reminiscent of an Asian temple.

The dining room has black mid-century metal and wood tables surrounded by leather-upholstered banquette seating. Each seating alcove features an ornate brass lamp with chinoiserie toile fabric shade to provide soft, elegant lighting.

The windows have an abstract lotus shape, while floor-to-ceiling partitions formed from a combination of Japanese rain chains and Chinese screens convey a sense of intimacy.

The menu offers first courses like a tempura encrusted crispy soft shell crab with a touch of heat from a green chili aioli, and a caramelized cassia-braised pork belly topped with grilled diver scallops. Among the entrees are a miso-spiced black cod wrapped in hoba leaf accompanied by pickled daikon and spicy den miso. Among the desserts are banana and green tea cake served with coconut ice cream and matcha ganache.

Pacific Rim is the third specialty restaurant on the new Regent Seven Seas Cruises ship, joining Chartreuse for classic French cuisine and Prime 7, a steak house.

Seven Seas Explorer is scheduled to debut in July 2016.
