Three-star Michelin chef Mauro Uliassi to create menu for Explora I's maiden voyage

Explora Journeys partnered with renowned Italian chef Mauro Uliassi to deliver a culinary experience for passengers joining Explora I's maiden voyage.

The collaboration means Uliassi becomes the first guest chef at Anthology, a venue where guest chefs craft menus in collaboration with Franck Garanger, Explora Journeys’ head of culinary, presenting global cuisines with wine pairings. 

The menu, showcasing a blend of tradition and modernity in Italian cuisine, will use the freshest and finest ingredients sourced primarily from local producers, according to Explora Journeys. It will be available to passengers from July 17 when the vessel begins its maiden voyage to September 25 when the ship arrives in New York. 

Anthology will have an intimate feel, with lower light levels, and will offer passengers the opportunity to dine al fresco. Its tasting menu is priced at EUR 190 per person, with a EUR 75 per person wine pairing option. 

Balancing contemporary techniques and creativity

Jason Gelineau, head of product, Explora Journeys, said, ‘We are thrilled to welcome Chef Uliassi onboard Explora I and offer our guests the opportunity to indulge in his truly exceptional culinary creations. 

‘Balancing contemporary techniques and creativity with a deep respect for regional culinary history, our chefs have one aim: to enhance the memories that guests take with them long after their journey has ended.’ 

Flavours and textures of the ocean

Uliassi gained three Michelin stars at his restaurant Uliassi in Senigallia near Ancona on the Adriatic coast. Known for his innovative approach to Italian cuisine, his food reflects passion for the sea and respect for the environment, with the chef celebrating unique flavours and textures of the ocean. 

Uliassi expressed his enthusiasm for the partnership, stating, ‘...Having known the group [MSC Group] for many years, this collaboration truly is close to my heart. 

‘It is a unique opportunity to showcase my interpretation of Italian cuisine and celebrate the beauty and sustainability of the sea. Inspired by the endless treasures of the ocean, I look forward to creating a truly multi-sensory experience for guests dining at Anthology.’ 

Inaugural voyage of Explora I 

The naming ceremony for Explora I will take place in Civitavecchia on July 8, followed by its maiden voyage departing on July 17 from Southampton for a 15-night sailing into the Norwegian fjords and the Arctic Circle to Copenhagen.
