Aquamar Kitchen and Ember to debut aboard Oceania Cruises' Vista

Among Vista's 12 culinary venues, four are new to Oceania Cruises and will be exclusive to this vessel debuting in 2023.

Ember is the signature addition. Open for lunch and dinner, it features a menu of inventive American creations blended with time-honored classics. Braised short ribs on polenta, grilled swordfish with asparagus, crab cakes with spicy aioli, and a cobb salad with smoked chicken are just a few of the delights. 

Aquamar Kitchen

Aquamar Kitchen presents a fresh perspective on dining and the pursuit of wellness. Breakfast selections include cold-pressed raw juices and super-food smoothies, hearty homemade granolas and avocado toasts, organic power bowls and savory wraps.

For lunch, dozens of healthy dishes are offered such as slow-roasted organic salmon with quinoa tabouleh and lemon tahini, yellowfin tacos with white cabbage slaw and a crunchy chicken sandwich on a freshly baked whole grain bun.

The Grand Dining Room

Oceania Cruises' signature dining experience, The Grand Dining Room offers Continental dishes and, now, a fresh and new array of options. Every day presents choices from signature Jacques Pépin classics to global flavors and an all-new Executive Chef’s Tasting Menu. Menus change daily with a choice of at least 10 appetizers, soups and salads and 10 dinner entrées, along with healthy options such as Aquamar Vitality Cuisine.

Polo Grill and Toscana

Polo Grill, a classic steakhouse experience, will have richly layered décor and custom millwork to create an imaginative rendition of tradition set against crisp white linen tablecloths. All beef dishes are 28-day dry aged certified Black Angus USDA Prime, while the seafood selection includes classics like grilled swordfish and whole Maine lobster gratinée.

Toscana presents an evolution of Tuscan cuisine in an Italian setting of Chianina leather, hand-blown Venetian glass and Carrara marble with elegant, custom-designed Versace china. Entrees include octopus carpaccio with Champagne vinaigrette and artichoke and parmesan cheese timbale with black truffle sauce, followed by classic dishes such as hand-rolled gnocchi with pesto, risotto with lobster medallions and shallots and pan-seared sea bass filet finished with Sorrento lemon, chardonnay and capers.

Red Ginger

Red Ginger evokes the boldness and subtleties of its pan-Asian dishes. Like the room itself, the Thai, Korean, Japanese and Malaysian-rooted specialties are a mélange of spicy and soothing, savory and sweet. Chocies include a salad of spicy roast duck and watermelon with cashews, mint and Thai basil, Malaysian beef penang with coconut rice and paratha roti and Thai vegetable curry with sweet potatoes, aubergine, mushrooms and basil in green curry sauce.

Casual dining

Terrace Café provides informal dining any time of day, inside or alfresco at one of the shaded tables on the terrace. Breakfast provides a selection including made-to-order eggs, omelets, pancakes and waffles. At lunch an expansive menu of international-inspired dishes is complemented by roasted and rotisserie meats and the pizzeria’s oven.

Dinner selections range from grilled-to-order lobster tail, fish, filets and steaks to freshly made, hand-cut sushi and sashimi. A varied menu of hot and cold specialties changes daily along with Chef’s Market Dinners featuring locally inspired specialties from the ports of call.

Located steps from the swimming pool and the Terrace Café, Waves Grill offers a casual setting for all-American favorites. Here, the chefs grill gourmet burgers, seafood and sandwiches to order in the open galley. Desserts include homemade sorbet, hot fudge sundaes and hand-dipped milkshakes.

Culinary Center with new ocean-view dining

In the Culinary Center chef instructors share their perspectives on culture and cuisine. Travelers can take part in hands-on instruction and a new, ocean-view Culinary Center Dining Room affords space for private group dinners or a food and wine pairing experience.

On Vista, Priveé, Oceania Cruises' marquee venue for bespoke dining for a maximum of 10 guests, has dramatic backlit, debossed walls and a blooming flower petal ceiling with a chandelier over the polished marble slab dining table. The space also has a wall of floor-to-ceiling glass for exhilarating views.

Near Baristas, the new Bakery

Speaking of views, Baristas has commanding 270-degree views for complimentary illy espressos, cappuccinos and lattes prepared by master baristas along with pastries, finger sandwiches and homemade biscotti. Steps away, the new Bakery, will serve freshly baked French and Italian pastries like chocolate-almond croissants and sweet bombolini.
