Australian appointed executive chef of Aqua Mekong
Francesco Galli Zugaro, founder of Peru’s Amazon River operator Aqua Expeditions, has appointed David Thompson executive chef of Aqua Mekong which is due to come on line in September.

Galli Zugaro nows resides in Singapore where the company has opened an office to oversee the building in Vietnam of his company’s third luxury boutique ship which will sail between Cambodia and Vietnam.

Thompson, who worked in Bangkok for several years, operated the Nahm restaurant in The Halkin by COMO London, the first Thai restaurant in Europe to be awarded a Michelin star.

‘Working with Aqua Mekong will be an exciting challenge and the food will be based on the cooking of Thailand, Cambodia and Vietnam, the countries which depend on the Mekong River,’ Thompson said.
