P&O Cruises Australia has released details of two more dining outlets that will be on board Pacific Explorer when she arrives in Sydney on June 22 after an extensive makeover in Singapore.

The 1,998-passenger Dawn Princess is changing its name and is being transferred from Princess Australia’s fleet to P&O Cruises Australia as Pacific Explorer.

Australian celebrity chef Luke Mangan, whose signature ocean-going restaurant, Salt grill by Luke Mangan, is on board ships throughout P&O’s Australian fleet, has come up with a new poolside grill called Luke’s on Pacific Explorer. It will serve ‘seriously delicious' gourmet burgers, including Luke’s Chicken Confidential.

The 77,000gt ship also has a new pizzeria, 400 Gradi, from Melbourne chef Johnny Di Francesco.

Di Francesco, who trained in Naples, will be offering more than a dozen traditional Neapolitan pizzas as well as charcuteries, salads and cheese boards.

P&O Cruises Australia president Sture Myrmell said the new outlets reflect the trend towards casual gourmet dining ashore.

Myrmell also said Pacific Explorer’s main cocktail bar, The Bonded Store, will feature handcrafted spirits from P&O Australia’s new partnership with Sydney distillery Archie Rose.

The new dining outlets have been unveiled in the company’s latest brochure which features record ship deployments for Brisbane and Adelaide.

Brisbane will have three ships for the first time—Pacific Jewel from September to November 2018 and year-round cruising by Pacific Dawn and Pacific Aria.

South Australians will be able to cruise from their doorstep in February and March 2019, with a record 12 cruises, including Sea Breaks visiting Port Lincoln, Kangaroo Island and Melbourne.
