Sailing to the western Caribbean on Regal Princess from Port Everglades, Feb. 11-18, the two chefs will team on special menus throughout the ship's restaurants and bars. They'll also present cooking demonstrations and participate in question and answer sessions and cookbook signings.
Plus, each chef will lead a customized excursion. Noted for his Mexican cuisine, Linquist will lead a Cozumel tour, while Kilgore will lead a Jamaica excursion. Other ports include Princess Cays and Grand Cayman.
Food & Wine’s 2016 Best New Chef, Kilgore launched into Miami’s culinary scene in 2015 with the opening of Alter in the Wynwood arts district. Alter won numerous awards including Restaurant of the Year by Eater. Kilgore then opened BRAVA by Brad Kilgore inside downtown Miami's Adrienne Arsht Center. He plans to debut two new Miami restaurants in the coming year.
Bringing his progressive American cuisine to Regal Princess, Kilgore will showcase some favorite dishes including short rib Wellington with truffled mushrooms and free-range chicken, with popcorn Hollandaise.
Linquist, founder of Coyo Taco in Miami’s Brickell financial district and in Wynwood, will bring his upscale Mexican flair to the cruise. He'll feature creations like Coyo's charred octopus tacos with salsa Veracruzana and pickled jalapeños. Linquist plans to expand Coyo Taco to new locations in Miami Beach, West Palm Beach and Panama.
Adding a touch of sweetness to the sailing will be a Princess culinary partner, Norman Love, owner of Norman Love Confections, based in Fort Myers, Florida. Love’s creations blend premium quality chocolate, unusual flavors and artful designs. He will be leading several cooking demonstrations and curate chocolate tastings.
